Before final filtration and bottling, Becherovka spends several weeks in these barrels to settle a little and to become mellow and fine. During these weeks in the barrels, Becherovka slowly changes ever so slightly. It becomes darker and its taste becomes more well-rounded. This is no secret, and lovers of Becherovka who have had the opportunity to drink a glassful from an older bottle know it. The Czech Agriculture and Food Inspection knows it, too, and confirms that this process is absolutely natural and normal. Although Becherovka is a living product, it is always excellent and long-lasting. Should a consumer find a bottle of Becherovka from the end of the last century buried in his grandparents' garden, it still is Becherovka - the unmistakable features are still present in this excellent beverage. We have to admit that the discovery of an old or even very old bottle of Becherovka in one's backyard or among the old junk in the attic is a very rare event. Becherovka is usually consumed very soon after purchase, so a thorough search would be necessary to find an older bottle. Becherovka experts cannot agree on whether the time the beverage spends in the bottle makes the taste of the herbs more prominent or whether the taste of the spices dwindles away with time. Be that as it may, both professional and (the much more frequent) laymen's speculations about Becherovka's taste and ingredients are never-ending and this will not change in the future.

The influence of Limousin casks, the same that are used in Cognac, is obvious. They impart more oaky aromas (vanilla, bitter chocolate, creamy notes) than American oak. But it has achieved a remarkable smoothness, all edges cut and a rewarding complexity. The perfect dram for a sweet tooth. To be enjoyed after dinner, with a few dessert nibbles to complement its bakery bouquet. Better enjoyed with no water at all.

The climactic conditions for 2002 were ideal, characterized by low rainfall and drier weather with a healthier atmosphere than the previous years and few unfavourable incidents. The winter was mild overall despite quite severe frosts around the winter solstice (21.12.01). The spring was superb with only slight spring frosts causing very localised damage during the night of 15 April. July and August were warm with the occasional thunderstorm and the threat of drought was kept at bay by some welcome rainy spells. There was then little more rain for the rest of September where sunny, windy conditions prevailed. This led to a rare concentration and exceptional ripeness of grapes with a potential alcohol content of 10.28% and total acidity of 7g/l (eq. H2SO4). Harvesting started on 12 September for the earliest plots and lasted through to 28 September for the latest. The Vintage Rich 2002 is made up of 60% Pinot Noir, 7% Pinot Meunier and 33% Chardonnay. The choice of grape classification is of vital importance. The blend includes 17 crus only, which are either Grand or Premier Crus. These are located in the Montagne de Reims including Pinot Noir from Verzenay (Grand Cru) and Pinot Meunier from Ludes (Premier Cru), in the Grande Vallee de la Marne with Pinot Noir from Ay (Grand Cru) and in the Cote des Blancs where Le Mesnilsur-Oger constitutes one of the best Chardonnay (Grand Cru) vineyards. A dose of 28 g/l of sugar was added. The 2002 vintage has a pale gold colour with silver accents. It has a brilliant aspect and effervescence is lively and long-lasting. At first, freshness immediately predominates, balsamic notes of menthol and liquorice, together with hints of citrus fruits coming to the fore. As the wine is agitated, fruitier aromas, including winter cherry, mirabelle plums and grapefruit, follow, accompanied with a subtle hint of white flowers. After a few more minutes of aeration, typical 'Veuve Clicquot' notes of dried fruit (almonds, hazelnuts) and pastries (brioche, marzipan) take the lead, crowned by a veil of sweet spices like vanilla. In the mouth the wine is lively and firm, yet soft and velvety. The carefully chosen dosage provides a smooth elegant touch, with no sense of heaviness. In the mouth, the flavours confirm the wealth of notes perceived on the nose, with spicy fragrances resulting from the dosage. The finish is also contradictory, with a structure that is based both on freshness and smoothness. This elegant, well-balanced wine will delight the palate for at least the next 15 years, and, already, from a culinary point of view, its double personality is extremely interesting. Its freshness is the perfect foil for Asian cuisine (fish with fruit) while its velvety facet marries beautifully with foie gras... Whatever the choice, spicy dishes can but enhance this delightful gastronomic wine.

Fourth great vintage in a row, for the first time this century in Alsace ! The weather was uneven all year, but flowering passed without incident, followed by a heatwave from early August until 15th September. The harvest began early, on 24th September, giving very good results for our bought-in grapes. Grapes from our own Estate were picked under ideal conditions, and gave an appreciable quantity of late-picked over-ripe wines. An excellent crop of Gewurztraminer made up for the very small harvest in 1997. Vinification: Our Gewurztraminer VENDANGE TARDIVE and SELECTION DE GRAINS NOBLES wines all come from the historic HUGEL family estates in the heart of the Grand Cru Sporen slope. As for the rest of our production, our grapes are harvested exclusively by hand. The grapes are taken in small tubs to the presses, which are filled by gravity, without any pumping or other mechanical intervention. After pressing, the must is decanted for a few hours, then fermented in temperature-controlled barrels or vats (at 18 to 24C). The wine is racked just once, before natural clarification during the course of the winter. The following spring, the wine is lightly filtered just before bottling, and the bottles are then aged in our cellars until released for sale. Harvest date : 23 & 28. The wine swirls softly and languorously around the glass, a picture of refined elegance in satin and silk, with brilliant gold highlights. Liqueur-like, luscious, perfectly opulent, rich and ripe, it is elegantly balanced and suave. An SGN that all fans of late-harvest wines should have in their cellars. Serve it at 6C, or cellar it for 15 to 20 years just for the pleasure of enjoying an intense emotional experience, with terrine of foie gras, pan-fried foie gras with quince, with fruit tarts, with Roquefort or with Stilton.
