Xoriguer (pronounced sho-ri-gair) is the same today as it always has been. It is the result of distillation in traditional copper stills, using high quality wine alcohol and carefully selected juniper berries, which come from the neighbouring Mediterranean mountains, together with aromatic herbs. These herbs are the jealousy guarded 'secret' of the liquor's original bouquet. Only the heirs of family know the identity and proportion of this valuable ingredient, which is added behind closed doors and without witnesses, at the start of each distilling. The respect for tradition is such that the fuel still used today in the distillation is wood. The distillation begins when the vapours which are produced in the still's boiler circulate through copper pipes until they reach a coil, where they condense, forming a precious liquid that drips into jars. An expert tastes the liquid at intervals to determine the pecise moment when the distillation is complete. Once this is accomplished the gin is stored in large oak barrels, where it retains unchanging its colour, flavour and aroma, until finally it is bottled. Xoriguer, thanks to its unique character and to its distillation from natural products, is free of any unwanted additives which could impair its preservation or spoil any kind of cocktail or mixed drink.

Pine and lavender notes from Italian juniper rightly lead both the nose and palate of this traditionally styled gin. Coriander adds notes of ginger and sage, while orris root imparts subtle hints of parma violet. Sweet almond, liquorice and angelica soften and smooth while also adding further complexity to the flavour. Unlike so many gins these days, Bermondsey Gin is made to a very traditional London style. It is a true London distilled dry gin made only using the botanicals found in gins from the 1800s. Bermondsey Gin does not include cucumber, rose, grains of paradise or any of the other weird and wonderful botanicals introduced to gin making over the past couple of decades. Bermondsey gin is simply excellent, traditionally styled London distilled dry gin. Bermondsey Gin is the result of one man's experience and his dream of making his own gin. Back in 2001, Christian Jensen's banking job led to his living in Tokyo for a couple of years. One night after a particularly hard day at the bank he stumbled upon one of Tokyo's legendary hidden bars. Set in a high-rise building this tiny establishment comprised of one small, dimly lit room with an ancient plank that stood as the bar. The old man that stood behind it introduced himself as Oda-san, and said, 'you look like you could use a drink.' He set a crystal tumbler containing a clear liquid, garnished with a lime peel in front of Christian and explained that it was a 'Naked Martini made with pure gin from your city, London, nothing more.' The drink buzzed with flavours and over the following months Christian stopped at Oda-san's place almost nightly for the same elixir. Then one night, as Christian stopped in to say farewell to Oda-san, he handed him a gift; a bottle of gin, the label almost completely worn way except for 'don Gin'. 'Take this,' Oda-san said. 'The last bottle, the soul of London and its gin.' He paused with longing, 'no one makes this anymore, and once it's gone...' and his voice trailed off. Over the course of the following year, not a day went by without Christian thinking about Oda-san and the amazing gin. So started one man's quest to recreate the flavour of that authentic 19th century London dry gin.

Hayman's Sloe Gin is a traditional English liqueur made to a long standing family recipe that had previously only been available for private use. Carefully selected wild English grown sloe berries are gently steeped for several months with Hayman's Gin before being blended with natural sugar creating a rich ruby red liqueur with smooth and intense bitter sweet fruit flavours. Sloe Berries, a type of wild plum, are the fruit of the blackthorn tree which is native to Europe and traditionally harvested in the autumn ideally after the first frosts. Sloe Gin was a popular drink alongside other fruit gins from the 19th century onwards. Traditionally sipped as a digestif and as a winter warmer at outside sporting events, today it is still enjoyed on its own, over ice or as a long drink. It was also an important ingredient in the first cocktail era of the late 19th and early 20th century. Listed as a requisite bar item in Harry Johnson's 'Bartenders Manual' of 1882, it was also used in classic cocktails such as Sloe Gin Fizz and The Blackthorne.

Foxdenton are often asked; 'What makes your Sloe Gin recognisably different ?' So what is difference? To the eye. This Sloe gin is paler than others. Foxdenton don't add any colourants so the paleness is a result of the way they treat thier Sloes and that its all natural. On the nose, this Sloe Gin is quite 'ginny.' Foxdenton Sloe Gin is appreciably drier. They use less sugar so the end result is less like a liqueur but is still very easy to drink. Foxdenton make their Sloe Gin at 29% ABV. stronger than nearly all other Sloe gins, this does give rise to a higher costs but they think it gives this Sloe Gin real bite. So although Foxdenton only use Sloes Sugar and Gin as do the other makers they really do make a Recognisably Different Sloe Gin.

Hayman Distillers, the longest serving Gin Distilling family in England, bring to you Hayman's 1850 Reserve Gin - distilled to a recipe from the 1850s, which is then cask rested for 3 to 4 weeks following the tradition of Gin Palace style Gin. In the mid 1800s, drinking establishments known as Gin Palaces were commonplace on almost every street corner in London. The first was most likely that of Fearon's, in Holborn Hill around 1830. During this era, Gin Palaces changed Gin from being something that people used to drink themselves into oblivion with to becoming more of a refined social activity. Before 1861, Gin was sold in barrels rather than in a bottle. Although Gin has never had an age statement - once distilled, Gin was stored, transported and served from barrels into jugs and smaller casks. In 1861, the then Chancellor of the Exchequer, William Gladstone, introduced the Single Bottle Act which allowed spirits to be sold in bottles. Following distillation, Hayman's 1850 Reserve Gin is rested in Scotch Whisky barrels for 3 to 4 weeks which add subtle mellow notes to the hints of spice and pepper from the Juniper and Coriander dominant Gin recipe resulting in an aromatic and full-bodied Gin. It is distilled in small batches of 5000 bottles, and each bottle is then individually numbered alongside the batch no. James Hayman commented 'We have been researching the relationship between Gin and wood for some time. The most important aspect about Gin is that its flavour is from botanicals and that it has never had an age statement. Therefore it was essential that the wood did not dominate the Gin and the final product had to be credible to Gin. It also fits in extremely well with the period before the 1861 single bottle act when wood was used to store, transport and serve Gin from.'
